What's for Dinner, Sat., March 28, 2026

Chicken Marbella. I didn't get to have it last night because I couldn't find two of the major ingredients. I found them this a.m., so I put them into the marinade while I was out at the protests. Looking forward to this, finally!!!

Cucumber tomato salad with red onion and vinaigrette.

Sweet potato fries.

Kombucha: blueberry basil.

Dessert: Cherry-vanilla ice cream milkshake. Almond biscotti.

2. Mexican Lentils

Green lentils cooked in water, veggie broth, tomato paste, minced onion, garlic, cumin, chili powder, oregano, red pepper flakes, and chipotle powder. When done and thickened I added sweet corn before serving. Salsa finishes the dish. Also made braised cabbage and onions with sliced mushrooms and microwaved sweet potatoes as sides. Salud! 🥂
Protests were inspiring today. Hope you were able to participate. All hands on deck!

3. Fish, shrimp, hash browns and butternut squash

The fish and shrimp were frozen, heated in the oven. I made fresh hash browns. I bought the squash last fall at a farm stand and had it in the pantry. I thought it might not be good, but I cut it open and it was fine. I roasted it and it was very flavorful.

with a generous mixed salad with hard boiled egg and ranch

all of dinner is leftovers.

TJ is off to work and Ducky is resting in the big chair.

I think it will be an early night for me.
