The first two recipes are from Ottolenghi's Plenty More Cookbook.
Raw Beet& Herb Salad
Has almonds, sesame seeds, pumpkin seeds; the herbs are basil, parlsey, dill, and cilantro. Also tarragon.
Chile flakes and lemon vinaigrette dressing.
Noodles with Green Onions & Edamame.
A couple crispy fried tofu strips in sesame oil.
Pineapple kombucha.
For dessert: Rice pudding with a few chocolate croissant strips, crisped up in the air fryer.

(36,652 posts)With a green salad and custard fruit tarts from Safeway for dessert. All I'm really doing is tossing the salad and boiling the pasta. I had the sauce in the freezer. I always make 4x the sauce I need, and freeze the rest in servings for two.
Egged then breaded chicken breasts pan-fried Louisiana style. Served with hot sauce and lemon. Pan-fried broccoli florets in olive oil, garlic, salt and pepper. Yellow rice. Tequila cocktails and lemon water.
There's a music video being shot in the park outside our NYC apartment and the neighborhood is all blocked off so we're staying in to watch the production. Dinner and a show!

(40,849 posts)My girlfriend lived in the apartment building where they shot the entrance of the MTM show. They were always returning for more entryway shots. She lived right on the ground floor (never do that!) by the entrance, too, so we often heard what was going on whether we wanted to or not.
And of course everyone's conversation who walked by.
I live somewhat close Tony Soprano's house, and when that show was being filed, we were always running into scenes.

(21,385 posts)I got some fresh vegetables yesterday, including an eggplant, zucchini and sweet Italian peppers. I had onion, part of a leek and some garlic scapes on hand. My daughter brought them last. She brought me garlic scapes before, but I'm just pretending I know what to do with them The leek is a new experience for me. I had about a half cup of cherry tomatoes from the Mother's Day plant. I also had about quarter jar of tika masala I wanted to use up. I floured and browned part of the eggplant, and layered it with everything else, plus just a little Parmesan cheese. When it was about finished, I sprinkled some Mozzarella cheese on top and let it finish. It was good, different because of some of the ingredients.
I cut the garlic scapes into 1/2" pieces and sauteed them with the leek and some garlic. While I was eating, I noticed that they had a texture like legumes, and added some texture to the casserole. I didn't have any bread or pasta, but it was filling. I've had an Indian meal with baby eggplant in sauce, and I thought using the tika masala would be ok. I went easy on the cheese in case it wasn't a good addition to the tika masala. All went well.
And zucchini bread. Dessert before dinner!

I was noticiing prices in the supermarket the other day and breaded eggplant was $16.79. Not eggplant parm, just the breaded eggplants slices. It was a big package, but wow.

(21,385 posts)I got a nice casserole from half, and will use the other half to make the chunky spread.
I've noticed that any food that is even a little processed is really expensive, wonder why breaded eggplant is so pricey?
Hope you get your eggplant parmesan!

Probably with fried eggs on the side. Also, spicy V-8 to try to add some vegetable component.
I'll worry about our cholesterol tomorrow.

(1,494 posts)Steam-fried in evoo and veggie broth; chopped onions, red bell pepper, sliced cabbage, carrots, zucchini, mushrooms and minced garlic. When done I added homemade marinara sauce, cooked black beans, and fresh chopped parsley, basil and oregano. When done I mixed in cooked farro wheat. Added a good sprinkle of vegan parmesan after plating. Cheers!🥂
