What's for Dinner, Mon., Memorial Day, May 26, 2025

Onion Pie with Lavender and Caramelized Onions.

I wanted to try using my lavender. It has bacon (I will use turkey bacon), eggs, cream, and gorgonzola.

Tossed green salad with fennel, apple, celery, and Caesar dressing.

Pomegranate blueberry kombucha.

Dessert: no-sugar apple cake. Decaf coffee.

1. Oven ribs, baked cottage sweet potatoes

I had things on hand and had no plans to go out

I simmer the ribs in a seasoned broth. When they are tender, I remove them and boil the broth down to sauce. When it's thick enough, I sauce the ribs and broil them on both sides.

I seasoned the sweet potato slices with salt, pepper, cayenne and granulated maple sugar then roasted them at 425 in a little sunflower oil, turned them after 20 minutes and roasted for 5 more.

I'll have some ice cream later

Chopped up the leftover salmon and asparagus from last night and added celery, onions, mayo and some black pepper. Wrapped in a flour tortilla.

Mug of decaf green tea from Bigelow.

It's an ex-pat dinner we're hosting for some of our new neighbors in Panama.

Appetizer
Choice of duck pate on sliced French bread or caviar with hard-boiled egg and chopped onions on Carr's crackers. Cold champagne.

Entree
Grilled New York strip steaks with a sauce of portobello mushrooms, onion and garlic.
Quartered potato wedges marinated in olive oil, salt, black pepper and fresh Rosemary then grilled on all sides.
Salad with Romaine lettuce, cherry tomatoes, green pepper rings and pine nuts with a creamy Italian dressing.
French Cote du Rhone red wine.

Dessert
Panamanian coffee.
Tropical fruit salad of pineapple, papaya, mango and green grapes.
Brandy, if anyone wants it, (no one is driving today!).

Respectful gratitude to those who gave the last measure of devotion for the people of the United States.

and it only cost $5.00 at the Gold Nugget casino. It was a special only for veterans. Plus $25.00 free slot play and I turned that into $130.00 to take home.

After the casino I went to the National Cemetery to visit my dad and brother.

on poppyseed hotdog rolls with chopped onion, relish, mustard and coleslaw. Potato salad made from baked red potatoes and steamed green beans with mushrooms. Strawberry shortcake sundaes with Breyer’s plant-based vanilla ice cream. Cheers! 🥂

She likes tacos as much as I do. Flour tortillas, ground pork (taco seasoning), shredded lettuce, finely diced tomatoes, sour cream.

Strawberry shortcake and pudding shots!
Mmmm. Pudding shots have pineapple juice, vodka, Malibu rum and vanilla pudding.
