1. This was a whole big bruhaha because her interviews seemed to have been hidden

in the initial document release. It was talked about for like 2 weeks here (about 2 months ago), and I know there were news stories in the M$M about it.

Democrats (when we win in November) IMHO should launch a high-profile investigation of who and how this information failed to make it into the original releases, noting that the administration had to be shamed into eventually putting the interviews out (which they did only because people noticed and called out their absence).

And Bondi was fired not too long after she did let that information come out. So there's a number of angles, because no matter what, it very much looks like an attempted cover-up.

Personally I think the prudent move for Democrats is to focus on the obvious coverup, plus the fact that as you say we know they haven't released everything, therefore it's logical to presume there could well be more accusations against Trump being kept secret, since they tried to do so with this interview.

I encourage you to read all the way to the bottom of the article. I like Garcia's tack at the end there. Hammer the coverup (a likely-provable fact), don't focus on litigating the claims themselves, which will almost certainly never be "proven".
